Gut-Healing Carrot Cake Baked Oatmeal

This make-ahead recipe has fiber-rich ingredients that are healing to our gut and all our little warriors fighting on our behalf. Our gut microbiome is made up of 100’s of Trillions of a variety of bacteria and microorganisms that influence our mood, immune function and are basically the gatekeepers to our health. They need fiber, and real food with tons of vitamins and minerals to thrive.

This is an easy GRAB & GO breakfast that is loaded with protein to support recovery and keep you full for hours, as well as healthy fats to balance hormones and blood sugar.

Carrot Cake Baked Oatmeal

(Makes 8 servings)

  • naturally sweetened with banana, carrots & a touch of real maple syrup


Ingredients:

For the Baked Oatmeal:

  • 1 banana, mashed

  • 3/4 Cup Shredded carrots (We shred them in the food processor; great opportunity for kiddos to help!)

  • 3/4 Cup Steel Cut Oats

  • 3/4 Cup Whole Rolled Oats

  • 5 Tablespoons Chia Seeds

  • 6 scoops Unflavored Collagen Peptides (I use Vital Proteins)

  • 2 scoops (30g) Vanilla Protein Powder (I use plant-based Nuzest)

  • 1 teaspoon Baking Powder

  • 1/4-1/2 teaspoon Real Sea Salt

  • 2 teaspoon Pure Vanilla Extract

  • 1 Cup Almond Milk (I love Three Trees or Elmhurst)

  • 6 Egg Whites only (200g)

  • 3 Whole Eggs (pastured if possible, because they have more nutrients!)

  • 4 1-inch chunks fresh ginger, grated

  • 1 teaspoon Cinnamon

  • 1/4 teaspoon nutmeg (more if you like Nutmeg like me!)

*Optional mix-ins: raisins/chopped nuts


For the Cream Cheese Frosting:

(At the time I warm up my serving of oatmeal, I just mix this together, warm it up… then drizzle away!)

  • 2 Tablespoons Kite Hill Plain Vegan Cream Cheese (or regular cream cheese if dairy works for you)

  • 2 teaspoons 100% Pure Maple Syrup


Directions:

  • Mix all wet ingredients together in medium bowl. (Include carrots)

  • Mix all dry ingredients together in large bowl, then pour in wet ingredients. Gently mix.

  • Pour into lightly greased 8x8” baking dish.

  • Bake @ 375° for 40-45min. or until light golden brown.

  • Let cool. Enjoy! Or cut into 8 pieces & save in the fridge or freezer.
